CPO deterioration by oxidation is one of the most important chemical changes affecting bleachability. Bleaching is a process in refining in which the colour of the oil is reduced by the removal of coloured pigments, impurities, gums, trace metals and oxidative materials. CPO that is badly oxidized will give rise to poor quality refined oil and products made from it will be off-coloured, off-flavoured and have poor shelf life.
